In conjunction with the “A Taste of Australia” culinary showcase at Shangri-La Rasa Sayang, Penang, running until November 11, 2025, distinguished master vinegar maker Ian Henderson brings his passion and expertise to Malaysia, inviting guests to explore the artistry and refinement of fine Australian flavours.

Representing The Australian Vinegar Co., Henderson hosted an exclusive, hands-on session for media members and invited guests, offering a rare insight into the intricate world of vinegar production, fermentation techniques, and the diverse varieties that elevate both Western and Asian cuisines.

A science graduate with an early career in winemaking, Henderson transitioned into the craft of vinegar-making more than two decades ago. His fascination with fermentation led him to Europe, where he honed his techniques under master artisans before returning to Australia to establish his own production. What began as a small-scale factory has since evolved into a state-of-the-art facility, producing award-winning vinegars renowned for their purity, complexity, and balance.

Now celebrating 21 years in business, Henderson continues to travel globally to share his knowledge and promote Australia’s growing reputation for high-quality, innovative condiments. 

“Vinegar is a universal ingredient,” Henderson explains. “It adapts beautifully to both Western and Asian cuisines, adding depth, brightness, and harmony to a wide range of dishes.”

Also in attendance at the event were Ms. Vivien O.P. Lee, Executive Director of The Model Cook; Dr. Kate Makin, Counsellor (Agriculture) at the Australian High Commission; Jegan Selvarajan, General Manager of Shangri-La Rasa Sayang Resort; and Dato’ Suleiman Tunku Abdul Rahman, Communications Director of the resort, among other distinguished guests.

Ms. Vivien Lee shared her enthusiasm about bringing Australian excellence to Penang: “As the exclusive distributor of Lirah Australian Vinegar and The Australian Vinegar Co., we are honoured to introduce these award-winning products to Penang’s vibrant culinary scene,” she said. “This collaboration celebrates authenticity, sustainability, and the shared joy of fine dining.”

Guests at the event were treated to an exquisite culinary journey at the Feringgi Grill, featuring a specially curated menu highlighting Australia’s finest produce — from sustainably harvested seafood sourced from the pristine southern waters, to premium grain-fed meats, and artisanal beverages including freshly roasted Australian coffee and native bush tea.

Complementing the menu was a chef’s selection of gourmet salts, infused vinegars, and crafted condiments, each designed to celebrate provenance and the integrity of natural flavours. Star ingredients included Jade Tiger Abalone, Southern Rock Lobster, Spencer Gulf Garfish, Scallops, and Premium Australian Wagyu, all elegantly prepared to showcase the versatility of Australian produce in fine dining.

The “A Taste of Australia” promotion marks the first-ever collaboration between The Model Cook and Shangri-La Rasa Sayang, Penang, bringing a sensory experience that embodies the best of Australian gastronomy — innovation, sustainability, and the spirit of culinary excellence.
