The Rasa Sayang Resort & Spa in Penang has come with two new organic cocktails in line with its initiatives to be sustainable in everything it does, extending to its food and beverage offerings.
Chefs at the resort utilise locally sourced and responsibly – produced ingredients whenever possible. This allows guests to sample vibrant flavours and be kind to the planet.
Recently, this philosophy led to the creation of two ‘Rooted in Nature’ cocktails.
The resort’s innovative mixologists Emirul Kassim and Mogan Kumar came up with the earthy Terra and fruity Pomona after visiting a local organic farm where they were surrounded by wholesome produce cultivated without any chemical fertilisers or pesticides.
After helping to harvest some of these crops, inspiration struck. The organic Calamansi, Beetroots and Mulberries they picked were bright and full of flavour, which made them perfect foils for gin and vodka. In Terra, named after the Latin word for Earth, the slices of these fruits bring out the vodka’s complex botanicals while sugar syrup and ginger ale adds sweetness and a refreshing finish.
Pomona, named after the Roman goddess of fruit trees, blends Calamansi and Beetroot juice with gin, peach syrup, bitter and soda instead. Though a touch fruitier, it is equally versatile as a pre-dinner aperitif or after-dinner sip.
“Many of the best-mixed drinks are also the simplest, and these two highball concoctions are no exception. The beauty of Terra and Pomona lies in its simplicity and organic ingredients that give you a taste of nature in every sip.
“Some drinkers may not like the dryness of a dry martini or the bittersweet of a negroni. The Terra and Pomona draw on these classics’ universal appeal but hit the middle ground with a semi-sweet flavour profile. After all, we are in the tropics, and something refreshing is always welcome”, said Emirul Kassim.
Both new cocktails are available at Feringgi Grill throughout the opening hours at RM38 per glass. Full recipes:-
TERRA – 45ml vodka, 20ml fresh organic calamansi juice, 3 slices of organic beetroot, 15ml sugar syrup, Ginger beer, Crushed ice.
POMONA – 45ml gin, 20ml fresh organic calamansi juice, 6 pieces mulberries, 15ml Monin peach syrup, 2 dashes of orange bitters, Soda and ice cubes.
